Sponge cake with dates and walnuts


  • 200 g of flour
  • 3 eggs
  • 150 of dates
  • 80 g of chopped walnut
  • 30 ml of extra virgin olive oil
  • 150 g of suggar
  • 1 baking powder bag
  • Cinnamon


  1. In a big bowl, beat with an electric mixer the eggs with the sugar during 8 minutes.
  2. Gradually add the flour, baking powder, cinnamon, nuts and olive oil while beating the mixture.
  3. Add the dates cut into small pieces and mix with a spatula.
  4. Brush the pan with olive oil and pour in the mixture.
  5. Bake in the oven at 180ºC for 45 minutes.
