Couscous with oranges and dates

This is a delicious way to enjoy the couscous. The contrast of the acidity of the oranges with the sweetness of dates is really amazing. Moreover it is a highly nutritious dish, we have only to remember that the dates are known among athletes for its high nutritional value.

Ingredients

  • 1/2 water cup
  • 2-3 tablespoons of brown sugar or honey (to taste)
  • 1 teaspoon of orange flower water (optional, available in Middle Eastern markets)
  • 3 tablespoons of dried apricots
  • 2 tablespoons of currants or raisins
  • 1 tablespoon of unsalted butter (optional)
  • 1 cup of couscous
  • 1/4 to 1/2 teaspoon of cinnamon (to taste)
  • 1/4 teaspoon of salt (opcional)
  • 2 Navel oranges
  • 6 dates, pitted and cut into quarters lengthwise
  • Granada seeds for garnish

Preparation

  1. Combine water and brown sugar or honey in a saucepan and bring to a boil.
  2. Place the couscous in a 2 liter vessel and add the cinnamon and salt. Stir. Pour the hot syrup. Mix and let stand for 20 minutes, stirring occasionally.
  3. Shortly before serving, turn steam the couscous: line a colander with a double layer of cheesecloth and pour the couscous into the strainer. Then set over a pan of boiling water one finger. Cover and steam for 15 minutes, transfer to a bowl, add the butter and stir until butter melts.
  4. With a knife, remove the skin and pith from the oranges, keeps on couscous so any juice dripping over the couscous.
  5. Stack the couscous in a mound on a plate or spoon into individual serving bowls.

Garnish with orange slices and seeds of Granada, and serve.
