Dried or Dehydrated Tomatoes: the slow drying process makes tomatoes to lose moisture and they could lose almost ninety percent of their initial weight. The decrease in volume causes the intensification of the tomato flavor, creating this way a condiment or ideal to accompany meat dishes or salad garnish. The sun dried tomatoes are popular in certain Mediterranean cuisines, one of the most famous is the Italian (Puglia region) where it is common to see roofs of houses full of these tomatoes drying in the sun. This type of tomato can also be found in some of the kitchens of the Spanish east.
